AuX Labs, a startup focused on innovative food technologies, recently announced it has secured $4 million in funding to develop its unique vegan cheese product. The investment round was led by NYA Ventures and Nàdarra Ventures, with contributions from several other investors, including Bluestein Ventures and Builders VC.
The company aims to create casein, a crucial protein typically derived from milk, using bioreactors without the need for cows. This advancement could lead to vegan cheese that closely resembles traditional dairy cheese in taste and texture. Co-founder Ted Jin emphasized the importance of achieving the right melt and stretch in the final product.
AuX intends to collaborate with microbreweries, which have been facing challenges post-COVID, to leverage their fermentation capabilities. This partnership not only supports the struggling breweries but also allows AuX to utilize existing resources without significant capital investment. Jin envisions a future where breweries can operate more autonomously by using kits provided by AuX, enabling more widespread production of this innovative cheese.
