Rebellyous Foods, a food technology startup based in Seattle, achieved a significant milestone with the launch of its Mock 3 production system, capable of producing more than 5,000 pounds of plant-based chicken per hour. This development marks a return to Washington state, where the company has established a mini-facility in Stanwood after previously collaborating on the Mock 2 system in New Mexico.
During a two-day demonstration last week, the system showcased its ability to continuously manufacture various chicken products, including nuggets, patties, and tenders, while adapting production levels in real-time. Founder and CEO Christie Lagally Bradburn described this as a "momentous final week" of the year, emphasizing the automation and efficiency of the Mock 3 system, which significantly reduces labor needs compared to traditional methods.
Rebellyous has experienced a remarkable 30% growth in 2025 and secured $3.5 million in funding in November to further its expansion plans for 2026. The company serves a diverse clientele, including schools, hospitals, and restaurants across the United States, and continues to collaborate with RMS Foods as a co-manufacturing partner.
